Calling all pickle fanatics: this egg salad is for you. Turn it into a sandwich or just spread it on a cucumber or a pickle slice for an easy low-carb snack. The tangy pickles and fragrant dill make this egg salad so tempting that you might just find yourself eating it with a spoon straight from the fridge (we won't judge).

Ingredients

  • 6 Pete and Gerry’s Organic Eggs, hard boiled and finely chopped
  • 1/2 cup dill pickles, finely chopped
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper to taste
  • Bread rolls and/or pickle slices for serving

Directions

Step 1

Combine eggs, pickles, mayonnaise, and dill in a medium bowl. Stir until well mixed. Season with salt and pepper to taste.

Step 2

Serve the egg salad on your favorite bread rolls for lunch or on slices of pickle or cucumber for a snack or picnic finger food.
