This breakfast plate is all about balance, ease, and intention. Creator (and icon) Terrence Coleman’s version features jammy eggs, smoked salmon, fresh vegetables, and a generous swoop of hummus for a nourishing meal that adapts easily to what you’re craving or what you have on hand. Made with Pete & Gerry’s Organic Pasture-Raised Eggs, it’s less about perfection and more about choosing feel-good ingredients that deliver real staying power.
Instructions
- Bring a small pot of water to a boil. Gently lower in the eggs and cook to your preferred consistency. (Try 6 1/2 to 7 minutes for perfect jammy eggs.) Transfer immediately to an ice bath to cool, then peel and halve.
- Spoon the hummus onto the center of your serving plate or shallow bowl.
- Arrange the jammy eggs, smoked salmon, cherry tomatoes, sliced snap peas, and broccoli florets around the hummus.
- Drizzle lightly with basil oil, season with salt and pepper, and serve immediately.
