Instructions

  1. Preheat the oven to 350°F and line an 8x8 inch pan with parchment paper.
  2. Melt the chocolate chips in the microwave using a microwave safe bowl. Cook on high in 20 second increments, stirring in between until fully melted. (approx. 1 minute total)
  3. In a food processor, pulse together avocado, maple syrup, and vanilla until smooth and no avocado chunks are visible.
  4. Pour in the melted chocolate and pulse until well combined.
  5. Crack the eggs directly into the food processor, add the cocoa powder, almond flour, and salt. Pulse until well combined.
  6. Scrape the batter into the prepared pan and spread evenly.
  7. Bake for 25 minutes and check if the batter is just set. Bake for 5 more minutes, if not. Bake until the brownies are just set and there is no more jiggle. Do not overbake.
  8. Optional: While still warm from the oven, sprinkle the top with a handful of additional chocolate chips and flaky sea salt.
  9. Cool completely before serving. Store in an airtight container in the refrigerator for up to 4 days.
