Instructions
- Preheat the oven to 350°F and line an 8x8 inch pan with parchment paper.
- Melt the chocolate chips in the microwave using a microwave safe bowl. Cook on high in 20 second increments, stirring in between until fully melted. (approx. 1 minute total)
- In a food processor, pulse together avocado, maple syrup, and vanilla until smooth and no avocado chunks are visible.
- Pour in the melted chocolate and pulse until well combined.
- Crack the eggs directly into the food processor, add the cocoa powder, almond flour, and salt. Pulse until well combined.
- Scrape the batter into the prepared pan and spread evenly.
- Bake for 25 minutes and check if the batter is just set. Bake for 5 more minutes, if not. Bake until the brownies are just set and there is no more jiggle. Do not overbake.
- Optional: While still warm from the oven, sprinkle the top with a handful of additional chocolate chips and flaky sea salt.
- Cool completely before serving. Store in an airtight container in the refrigerator for up to 4 days.
