Instructions
- Dry Shake: Combine all ingredients except the sparkling water in a cocktail shaker without ice. Shake vigorously for 15-20 seconds to emulsify the egg white protein and build a thick foam.
- Wet Shake: Add a generous amount of ice to the shaker and shake again for another 10-15 seconds until the mixture is well-chilled.
- Strain and Serve: Fine strain the mixture into a chilled coupe or rocks glass. Straining helps remove any small ice shards or citrus or ginger fragments.
