These breakfast sandwiches are about nourished mornings, not perfect ones. A warm, make-ahead breakfast can slow things down in the best way, inviting you to sit, take a breath, and actually stay awhile. Inspired by weekend drive-thru treats, these sammies feature soft baked Pete & Gerry’s Pasture Raised eggs from hens raised outdoors on small family farms. They’re easy to prep, easy to customize, and exactly the kind of meal future you will be grateful for.

Instructions

  1. Heat the oven to 325°F. Lightly grease a standard 6-cup muffin tin with nonstick spray or line with silicone muffin cups.
  2. Crack one egg into each muffin cup. Leave the yolks whole or lightly whisk each egg, depending on your preference. Season lightly with salt if desired.
  3. Bake until the egg whites are completely set, 18 to 22 minutes. Remove from the oven and let cool slightly.
  4. Place one baked egg on the bottom half of each English muffin. Top with your favorite cooked breakfast sausage patty and a slice of cheese, then close with the top half of the muffin.
  5. Serve immediately, or let the sandwiches cool completely before wrapping individually for storage. 

Storage & Reheating 

Refrigerator: Store wrapped sandwiches in the refrigerator for up to 5 days. Reheat for about 45 seconds in the microwave. 

Freezer: Freeze wrapped sandwiches for longer storage. Reheat from frozen for about 2 minutes, or until heated through.
