COVID-19 and your eggs: an update from us
Words by: Family Farm Team
The flavors of the Southwest translate beautifully to any meal, but there's simply nothing better than eggs with some Tex-Mex flair. Spice up your morning with these Southwest-inspired breakfast recipes and put a little kick in your step for the rest of the day.
Thanks to all the elements and layers of flavor, huevos rancheros are anything but boring. If you're hosting friends or family, a toppings bar is the ticket to your guests' hearts: think fresh jalapeños slices, pickled red onions, and chunks of creamy avocado.
Spicy Southwest flavors are a meal-prepper's best friend. Why? Because they hold up well in the fridge, which means you don't have to fret about flavorless on-the-go breakfasts anymore. Make a batch each of these chipotle sweet potato, verde, and fajita egg cups to pack some punch into your morning commute.
It may look like a simple veggie frittata on the outside, but that punch of tartness and spice will blow you away with one bite. The colorful pico de gallo on top gives this shareable breakfast even more Mexican flair.
They're not just for dinner anymore! Scrambled eggs, green enchilada sauce, hash browns, and melty cheddar cheese all in one casserole dish is a guaranteed lip-smacking breakfast. Serving a crowd? This recipe can handle it.
You've had fried eggs for dinner; now try chicken tacos for breakfast. Instead of that oft-overly-greasy conglomeration of cheese and a quick scramble, these soft paleo tortillas are filled with tender marinated chicken, radishes, and cilantro for a bright and clean start to your day.
Anyone who has a soft spot for breakfast burritos knows that it's hard to improve on a classic cheese, scrambled eggs, and tortilla situation. Complete with homemade vegetarian bacon and cilantro pepita pesto, the green goddess breakfast burrito is a serious contender.
Anyone can whip up a Southerwest-inspired breakfast full of complex and intense flavor without a special trip to the store. Give these breakfast tacos a try with the staples that you already have on hand.
Playing with big flavors always pays off. Exhibit A: this mountain of scrambled eggs, turkey bacon, crispy potato bits, and salsa blanketed in smoked cheddar cheese. Warm tortillas on the side are highly recommended.
Spicy crumbles of chorizo merging with a runny egg yolk...that's what dreams are made of. Add crispy hash browns and fresh cilantro to the mix, and suddenly your breakfast wishes have been granted.
Southwest meets turkey, stuffing, candied yams, and gravy in these bursting-at-the-seams breakfast burritos. If you're a lover of all things spicy, try melting some hot habanero cheddar cheese into the center before you wrap them up.
You can't go wrong with this traditional Mexican dish. The combination of warm tortilla bathed in spicy sauce is the perfect excuse to have comfort food for breakfast, and not to mention the ideal venue for crispy fried eggs and tangy crumbles of queso fresco.

I just bought my first Pet and Gerry's eggs. Had never seen them before. They taste like the real eggs that I got from my grand parents farm 60+ years ago and a better price than most organic eggs.

This is music to our ears, Gail! We're glad you were able to give our eggs a try and that they hit the spot just like the eggs of your childhood. Thanks for sharing your story with us!
