Blueberries are already low in carbs, so it's only fitting to highlight them in the sweet, juicy, caramelized topping that crowns this keto blueberry upside-down cake. Whether you use fresh or frozen, the berries will inevitably form a glaze for the moist, gluten-free crumb to soak up, turning every piece into a slice of pure blueberry bliss.

Directions

To make the topping:

Step 1

Preheat oven to 325F and grease a 9” x 9" square baking pan.

Step 2

In a small bowl, whisk together the brown sugar substitute and melted butter until well combined. Spread over the bottom of the prepared pan. Sprinkle with the blueberries and set aside.

To make the cake:

Step 1

In a large bowl, whisk together the almond flour, granular sweetener, coconut flour, protein powder, baking powder, and salt. Stir in the eggs, melted butter, water, and vanilla extract until well combined.

Step 2

Spread the batter over the blueberry topping as evenly as possible. Bake 30-40 minutes, until the edges are nicely browned and the center is firm to the touch. Remove and let cool 10 minutes, then place a serving platter over the baking pan and invert the cake. Immediately remove pan to avoid any sticking.

Step 3

Let cake cool completely before cutting into squares. Serve with lightly sweetened whipped cream, if desired.

I found it a bit too sweet, so incorporated the blueberries into the cake. Delicious! Great cake recipe.

This was delicious! I do like the idea of adding lemon flavor, and I will do that next time. I made it in a pie plate and cut into 8 slices, so it had twice the carbs, but I made room for them so I could splurge. To reheat, I put butter on top and cooked in microwave for one minute - came out perfectly.

I agree, I would use lemon extract if you have it. Lemon extract or zest and blueberries, are mentioned in many dessert recipes. I tasted the batter and the lemon extract made it more distinct for the flavor. I did use protein powder with collagen (I had Vital Proteins which had 18 grams of protein and 20 grams of collagen for the ingredients, plus it was grass fed and pasture raised). Plus I only had a 8x8 glass pan available. I set the timer for 30 minutes and will keep an eye on it. It is in the oven now. I will let everyone know how it turned out.

Ok I would still recommend the lemon extract, it tasted very sweet to me, next time I will cut the swerve granulated sugar in half, just my taste buds. It came out just fine, and I ended up cooking it for 50-55 minutes. Used toothpick to test when it was done. Hope this helps!!!

Hey Virginia, Although we have not tried this recipe without the whey protein powder, it doesn't mean you can't. Of course with any baking recipe, leaving out an ingrediant will change the end result, and the "doneness" of the cake. Additionally, the cake may not rise as much.

Hey Tracy, If you are looking for a nut free substitute we would suggest using sunflower seed flour or rolled oat flour. Of course you could use all-purpose flour but then you couldn't consider the recipe keto.

Hi Marie, We are happy to hear you took this recipe for a spin. The batter is typically a little thicker than a traditional cake batter, but thinking the extra cream you added shouldn't alter the final product too much. How did do in your view? Was it just as tasty as we remember it being? Macros per serving are as follows: 6g carbs (excluding erythritol sweetener), 13g fat, 5g protein, 3g fiber. Further nutrition information can be found below the recipe ingredients list. We hope this helps and look forward to hearing how you enjoyed your cake!

Delicious, doubling the blueberry part was juicy and certainly not dry. The only thing is I didn't cook it long enough so the middle of the cake batter was not all cooked, still tasted good. I'll correct that the next time.

I added 1/4 cup Dr. Axe multi protein collagen in place of whey protein powder and it was perfect. I have read in other recipes to just add that amount in additional almond flour. I feel it is easy to substitute for protein powder. I’m with you, those of us in “non” professional kitchens don’t have all these supplies and substitutions are appreciated 😀.

Reply Page 1 Created with Sketch.

April 21, 2020

Hi Jodie, sunflower seed flour is the best substitute for almond flour because of its similar composition. The recipe writer, Carolyn of All Day I Dream About Food, recommends it regularly. Add a tablespoon of lemon juice or vinegar to the cake to offset the chlorophyll in the sunflower seeds, which can turn a harmless shade of green during baking otherwise. Other non-nut flours, like coconut flour, would require re-working the recipe to accommodate their different textures.

Protein powder is in the recipe because it helps form the structure of the cake like gluten does in traditional wheat-based recipes. Omitting the protein powder may compromise the rise of the cake.
