Instructions
- Preheat oven to 450°F.
- Add the egg whites to the bowl of a stand mixer. At high speed, with the whisk attachment, beat the egg whites until stiff peaks form.
- Using a spatula, gently fold the cheese into the egg whites, taking care not to deflate the mixture.
- Line a sheet pan with a nonstick baking mat or parchment paper. Spoon the egg whites onto the prepared sheet pan in 4 equal nests or mounds.
- Create small indentations in each egg white nest, then season with pepper. Bake for about 3 minutes, or until the egg white is just starting to firm up.
- Gently place an egg yolk into each egg white nest. Return to oven and bake for an additional 3-4 minutes, or until whites are starting to brown just slightly and yolks are still runny.
- Garnish with green onion and chopped bacon. Serve immediately with a generous drizzle of Truff Original Hot Sauce.
