Cloud eggs are here to transform your mornings into a culinary delight. Imagine airy, meringue-like nests of egg white, baked to a delicate perfection, cradling a perfectly runny yolk. It's a dish that's as visually stunning as it is delicious.

This updated recipe brings together the fresh goodness of Pete & Gerry’s eggs with a touch of bold flavor, thanks to the magic of TRUFF Original Hot Sauce. With just a few simple ingredients and minimal effort, you can create a breakfast that feels both indulgent and nourishing. Get ready to experience breakfast on cloud nine!

Instructions

  1. Preheat oven to 450°F.
  2. Add the egg whites to the bowl of a stand mixer. At high speed, with the whisk attachment, beat the egg whites until stiff peaks form.
  3. Using a spatula, gently fold the cheese into the egg whites, taking care not to deflate the mixture.
  4. Line a sheet pan with a nonstick baking mat or parchment paper. Spoon the egg whites onto the prepared sheet pan in 4 equal nests or mounds.
  5. Create small indentations in each egg white nest, then season with pepper. Bake for about 3 minutes, or until the egg white is just starting to firm up.
  6. Gently place an egg yolk into each egg white nest. Return to oven and bake for an additional 3-4 minutes, or until whites are starting to brown just slightly and yolks are still runny.
  7. Garnish with green onion and chopped bacon. Serve immediately with a generous drizzle of Truff Original Hot Sauce.
