Simple to make but visually elegant, this chocolate mousse is the perfect addition to a night of festivities. A splash of brandy goes a long way, adding a sweet oaky flavor to the light-as-air dessert.

Directions

  1. In a saucepan, warm 1 cup of the cream on low heat until bubbles start to appear around the edges.
  2. Add the chocolate chips and stir gently until the chocolate chips have melted and the mixture is well combined.
  3. Add the egg yolks and brandy and stir well. Add the butter and continue stirring until the butter has melted and the mixture is well combined.
  4. Transfer the chocolate mixture to small ramekins or glass jars. Leave about an inch of space at the top of each.
  5. Place mousse in the fridge for an hour until set.
  6. By hand or with an electric mixer, whisk the sugar and remaining 1 cup of cream until you achieve soft peaks. Remove the mousse from the refrigerator and decorate with a dollop of the whipped cream and gold sugar sprinkles, if desired.
