Any occasion worth celebrating deserves a flashy spread of sweets. Simple to make but visually elegant, this chocolate mousse is the perfect addition to a night of festivities. A splash of brandy goes a long way, adding a sweet oaky flavor to the light-as-air dessert. With or without the gold sugar sprinkles, it's an eye-catcher!

Step 1

In a saucepan, warm 1 cup of the cream on low heat until bubbles start to appear around the edges.

Step 2

Add the chocolate chips and stir gently until the chocolate chips have melted and the mixture is well combined.

Step 3

Add the egg yolks and brandy and stir well. Add the butter and continue stirring until the butter has melted and the mixture is well combined.

Step 4

Transfer the chocolate mixture to small ramekins or glass jars. Leave about an inch of space at the top of each.

Step 5

Place mousse in the fridge for an hour until set.

Step 6

By hand or with an electric mixer, whisk the sugar and remaining 1 cup of cream until you achieve soft peaks. Remove the mousse from the refrigerator and decorate with a dollop of the whipped cream and gold sugar sprinkles, if desired.

Great question, Mags! This mousse should keep well for 2-3 days in the fridge.

Since my husband can't drink alcohol due to the meds he's on, can I substitute an extract instead?

You are welcome to just leave the alcohol out entirely, Kim, or you can add in a teaspoon of vanilla extract in it's place if you prefer!
