This isn't just any breakfast; it's a little slice of Mumbai's culinary history! Legend has it that this dish was born in the Willingdon Sports Club, a delightful blend of comfort and spice. Think golden, buttery toast with a melty, spicy cheese blanket topped with beautiful Pete & Gerry's eggs fried to perfection. It's the kind of dish that'll have you saying, 'Ahhh, that's what I needed!' So, grab your apron, and let's turn that 'morning after' into a 'morning mastered!' with this delightfully simple, outrageously delicious recipe.

Instructions 

  1. Heat a frying pan over medium heat (you'll also fry the eggs in this pan later, so choose your favorite pan). Add butter to melt, and then add the bread and toast on each side. Once well toasted, transfer the bread to a broiler-safe sheet pan and smear the top side of the toast with mustard. Turn on the broiler.
  2. In a medium bowl, mix together the cheese, chile, cilantro, and onion, then pile it evenly between the toasts. Place under the broiler for 2-4 minutes or until cheese is melted.
  3. Meanwhile, fry the eggs in the same pan. Melt a teaspoon of butter, crack the eggs into the pan, and cover. Cook for 2-4 minutes, or until the egg whites are set and crisp at the edges (or fry to your desired doneness).
  4. Serve fried eggs over the cheese toast and top with salt and pepper.
