Cook the bacon.
In a skillet over medium heat, cook bacon until crisp. Transfer to a paper towel-lined plate. - Fry the eggs.
In the same skillet, reduce heat to medium-low and add butter or oil if needed. Crack in the Pete & Gerry’s eggs. Cook until whites are set and edges are lightly crisp. For over-easy eggs, gently flip and cook 20 to 30 seconds more. Season with salt and pepper. - Toast the bread.
Toast until golden and sturdy enough to hold the layers. - Assemble the sandwich.
Spread mayonnaise on one side of each slice of toast. Layer lettuce, tomato, avocado, bacon, and the fried egg. Top with remaining bread. - Serve.
