BLT with Avocado & Fried Egg

A classic BLT is hard to beat, but adding a fried Pete & Gerry’s Organic Pasture-Raised Egg takes it to another level. The crisp bacon and fresh tomato bring the crunch and brightness, creamy avocado adds richness, and a high-quality egg ties it all together. When the yolk breaks, it becomes a built-in sauce that elevates every layer. Simple ingredients, thoughtfully prepared, and pasture-raised eggs that deliver flavor and structure you can count on.

Instructions

  1. Cook the bacon.
    In a skillet over medium heat, cook bacon until crisp. Transfer to a paper towel-lined plate.
  2. Fry the eggs.
    In the same skillet, reduce heat to medium-low and add butter or oil if needed. Crack in the Pete & Gerry’s eggs. Cook until whites are set and edges are lightly crisp. For over-easy eggs, gently flip and cook 20 to 30 seconds more. Season with salt and pepper.
  3. Toast the bread.
    Toast until golden and sturdy enough to hold the layers.
  4. Assemble the sandwich.
    Spread mayonnaise on one side of each slice of toast. Layer lettuce, tomato, avocado, bacon, and the fried egg. Top with remaining bread.
  5. Serve.
    Slice in half and serve immediately while the yolk is warm and ready to mingle with the bacon and tomato.
