Instructions
- Preheat the oven to 350°F and spray a mini muffin pan with nonstick spray.
- Roll out the pie crusts to 1/8-inch thick. Using a 2.5-3 inch cookie or biscuit cutter, cut out 24 circles.
- Place each dough circle into each mini muffin space and press down into the pan using a light touch.
- Add the mix-ins evenly into each mini crust and top with a sprinkling of cheese and herbs. Do not over fill – you’ll need space for the egg to pour in!
- Combine the eggs, milk, cream, and salt in a large bowl with a pouring spout. Whisk together until smooth.
- Gently pour the egg mixture into each pastry cup so that it’s just below the top of the crust.
- Place the muffin tin on a baking sheet and transfer to the oven. Bake for 25-30 minutes or until the quiche mixture is set. Let cool for 5 minutes before serving.
