Instructions
- In a 12- to 14-ounce microwave-safe mug, combine the ghee and approximately half of the chocolate chips.
- Microwave for 20-30 seconds, stirring until smooth. If needed, microwave in 10-second intervals until completely melted.
- Let cool for 1-2 minutes so the mixture is warm, not hot.
- Whisk in the sugar until mostly dissolved.
- Add the Pete & Gerry's Egg and whisk until smooth and glossy.
- Stir in the flour and salt just until combined.
- Fold in the remaining chocolate chips.
- Microwave on high for 60 seconds.
- The edges should look set while the center remains slightly glossy. If needed, microwave in 5-10 second intervals until just set.
- Let stand for 2 minutes before digging in.
- Dig right in or top with ice cream, whipped cream, and/or fresh berries.
