Fudgy Mug Cake

This rich, fudgy mug cake comes together with just a handful of pantry ingredients. Melting Enjoy Life Chocolate Chips with 4th & Heart Ghee creates the deep chocolate flavor, while a Pete & Gerry's Organic Pasture-Raised Egg gives it a soft, chewy texture. It's an easy dessert for one that's ready in minutes.

Instructions

  1. In a 12- to 14-ounce microwave-safe mug, combine the ghee and approximately half of the chocolate chips.
  2. Microwave for 20-30 seconds, stirring until smooth. If needed, microwave in 10-second intervals until completely melted.
  3. Let cool for 1-2 minutes so the mixture is warm, not hot.
  4. Whisk in the sugar until mostly dissolved.
  5. Add the Pete & Gerry's Egg and whisk until smooth and glossy.
  6. Stir in the flour and salt just until combined.
  7. Fold in the remaining chocolate chips.
  8. Microwave on high for 60 seconds.
  9. The edges should look set while the center remains slightly glossy. If needed, microwave in 5-10 second intervals until just set.
  10. Let stand for 2 minutes before digging in.
  11. Dig right in or top with ice cream, whipped cream, and/or fresh berries.

Helpful Tips

  • Don't overcook. The brownie will continue to set as it cools, and a little ooey-gooey is a good thing!
  • Every microwave is different, so start with less time and add more only if needed.
