This simple veggie fried rice is a go-to, weeknight favorite that brings together hearty carbs, colorful vegetables, and protein-rich eggs in one satisfying pan. Using Pete & Gerry’s Eggs adds rich flavor and high-quality protein from hens raised with care, making this dish as feel-good as it is delicious.

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add onion, asparagus, and peas. Sauté until vegetables are tender, about 5 minutes.
  3. Push vegetables to one side of the pan to create space for the eggs.
  4. In a small bowl, whisk the eggs. Reduce heat to medium and pour eggs into the open space in the pan.
  5. Gently scramble eggs until just cooked through.
  6. Add cooked rice and soy sauce to the skillet. Stir well to combine everything evenly.
  7. Cook for 2–3 more minutes, stirring occasionally, until heated through. Serve warm.
