Cobb Salad Skewers

These Cobb salad skewers bring all the best parts of a classic Cobb salad to the cookout table in a fresh, handheld format. Jammy Pete & Gerry’s Organic Pasture-Raised Eggs add richness and beautiful golden color, while crisp lettuce, smoky bacon, creamy avocado, and juicy tomatoes make every skewer feel bright and satisfying. Finished with a sprinkle of salt and pepper and served with your favorite dressing, they’re an easy summer BBQ side that looks just as good as it tastes.

Instructions

  1. Bring a small pot of water to a gentle boil.
  2. Carefully lower Pete & Gerry’s Eggs into the water and cook for 8–9 minutes for jammy medium-boiled eggs.
  3. Transfer eggs immediately to an ice bath and cool completely before peeling. 
  4. Cut peeled eggs into halves or thick wedges.
  5. Assemble skewers by threading butter lettuce, cucumber, tomato, bacon, avocado, red onion, and egg pieces onto skewers in alternating order.
  6. Arrange skewers on a serving platter and season generously with salt and black pepper.
  7. Serve chilled or slightly cool with dressing on the side for dipping or drizzling.

Tips

  • Assemble just before serving for the freshest texture.
  • Toss avocado pieces lightly in lemon juice if prepping ahead.
  • Short cocktail skewers work well if serving as a party appetizer.
