This light and lemony cocktail packs some intense flavor thanks to two key ingredients: Meyer lemon and egg white. Meyer lemon is abundant in the cooler months, and lends a sweet note to this gin fizz. When served, the foamy egg whites rise to the top of the cocktail like a layer of the fluffiest snow imaginable.

Ingredients

  • 2 ounces gin
  • 1/2 ounce simple syrup
  • 3/4 ounce Meyer lemon juice
  • 1 Pete and Gerry’s Organic Egg white (or 2 tablespoons liquid egg whites)
  • Soda water, to top
  • Fresh sage leaf, for garnish
  • Ice

Directions

Step 1:

Add gin, lemon juice, simple syrup, and egg white to a cocktail shaker filled with ice. Cover and shake well for 30 seconds.

Step 2:

Strain out the ice, and shake for 30 seconds longer.

Step 3:

Pour into a coupe glass. Top off with a splash of soda and garnish with a sage leaf.
