Despite only taking around ten minutes to cook and assemble, no flavor is sacrified in this easy breakfast for one. A flame-toasted tortilla smeared with avocado is just the beginning: next comes a shower of cheddar cheese crumbles, a layer of sliced heirloom tomatoes, a perfectly cooked sunny-side up egg, and a generous spoonful of spicy chili crunch.

  • 1 cassava flour tortilla
  • 1 Pete and Gerry's Organic Egg
  • 2 tablespoons mashed avocado
  • 1 heirloom tomato, sliced
  • 1 slice extra sharp cheddar, crumbled
  • 2 teaspoons chili crunch or chili crisp
  • Pinch of kosher salt

Step 1

Toast tortilla over an open flame on a stove top or in a cast iron pan on medium heat until crispy.

Step 2

In a nonstick skillet, cook egg over low heat until desired doneness (about 4-5 minutes for sunny-side up).

Step 3

To assemble, place tortilla on a plate, spread the mashed avocado on top, sprinkle over cheese crumbles, then top with tomato and egg. Finish with chili oil and a pinch of salt.
